I find this very hard to admit.
I’m almost a bit embarrassed.
Here it goes…
My kids do not like vegetables!
Now you know.
I feel better.
They will, on occasion, eat asparagus or broccoli.
They’ll eat peas in their pasta.
Carrots if they are raw.
Usually it is like pulling teeth.
Salad is the one way I can get them to eat at least something green, so we have salad EVERY night.
That can become boring.
Today our weather was beautiful, and we decided it was the perfect grill night.
We even grilled our salad.
This isn’t so much a recipe as it is an idea.
A really tasty idea:)
Grilled Caesar Salad:
Use 2 heads of romaine (hearts only) – this was for four of us
Cut lengthwise leaving the “root” intact
Grill over indirect heat just a few minutes on each side (we did 2 on each)
Remove from the grill
Drizzle with olive oil, and the juice of 1/2 lemon
Season with crushed black pepper and a bit of salt if you wish
Finish with a sprinkle of freshly grated Parmesan cheese
Delicious.
