It’s not always easy being Mom.
Can I stay up late?….NO
Can I stay home and play?…NO
Can I have cake for breakfast?…NO
Sometimes, I just want to say YES!
My kids seriously enjoy their sweets.
I know crazy huh.
They ask for dessert daily, and so I have been searching for ways to allow them to have their sweets and eat them too.
This is a treat that I can feel good about letting them eat.
Frozen Strawberry Cheesecake Pops:
~makes 4
4 paper cups
4 Popsicle sticks
4 tablespoons of graham cracker crumbs
16 ounces of Greek style vanilla yogurt
Diced strawberries (use as many as you like – I used 10 small berries)
Do:
place 1 tablespoon of crumbs in each cup (tap on counter to even out)
combine the yogurt with the berries (I mixed them well, so that the berry juice made the yogurt slightly pink)
scoop an even amount in each cup
add the sticks and freeze
With the graham crust, it really tastes like you are eating cheesecake with berries.
