Birthday Cake {frozen yogurt} Sandwiches

Today’s post is a clean out the pantry/fridge post.
First, I’ve been participating in project: Food Budget.
I had a rough start – I blame Whole Foods, but I’ve been under budget the last two weeks!
My goal is always $100 – this week we came in at $97.30. The only problem was that I didn’t include a recipe for today’s blog.
I was not going to spoil my budgeting with an extra trip to the market, so I went shopping in my kitchen.

First up – Funfetti cake mix left over from the Birthday Cake Rice-Krispy treats.
Then, I found an extra carton of vanilla yogurt – left over from the frozen strawberry cheesecake pops. Finally, I got the leftover chocolate dough from my homemade Oreo cookies.
Put them all together and you have one delicious treat.

 Birthday Cake Frozen Yogurt Sandwiches:
1 container of vanilla yogurt – 16 ounces
1/4 cup of cake mix (we used funfetti – super cute)
chocolate cookie dough (recipe here)

Bake cookies (cut larger than the Oreo) for 10 minutes at 350.
Allow to cool completely

Mix 1/4 cup of cake mix into the yogurt (make sure you blend this very well)
Freeze

Place two scoops on one cookie (one scoop if smaller cookies) I made BIG cookies ;)

Top with another cookie

 Voila ~ice cream frozen yogurt sandwiches

 Enjoy!

    • funny ~ I shop with a VERY detailed list, and try to get at least one meal that does double duty. Trader Joe’s helps a lot – they have great prices, and if we don’t have it – I am no longer making “side” trips – we do without. Those little trips add up to $$

  2. I need this for my friend. He’s courting and we need some unique way to give as a gift. This homemade heart shape cake will do the trick. That Oreo cookies cake is such a time saver.
