Tuesday is my kiddos favorite day of the week. Why, because it’s taco Tuesday.
This year, because of after-school-activities, we have had to move taco Tuesday to Wednesday. Except we still are calling it taco Tuesday:)
We pretty much stick with the basics, tacos, burritos, enchiladas. Then, I stumbled across a recipe for baked creamy chicken taquitos @Chef-in-Training. Don’t they look amazing?
I didn’t think my fussy one would go for the creamy part of these, so I switched the recipe up just a bit.
Recipe adapted from

For the taquitos:
12 flour tortillas
2 cups of shredded chicken (I cooked 2 chicken breasts with 2 tablespoons Trader Joe’s taco seasoning mix and then shredded in my food processor)
1 cup of shredded cheddar cheese
juice from half of a lime
add ins (completely optional) chopped cilantro, jalapeno, diced green onion
Do:
combine the shredded chicken and the cheese
add lime juice and any additional add ins
*we used 1/2 diced jalapeno in the adult taquitos
spoon a couple tbsp of chicken in each tortilla and roll up
place seam side down on a cookie sheet
brush the tops with a small bit of olive oil
bake @425F for about 15 minutes
Serve with all your favorite taco fixings.
BIG hit – even on a Wednesday.
