Last night’s dinner was one of the best I’ve made in a LONG while.
Although, it did not look anything like I had planned.
I was planning on baking chicken breasts similar to the nuggets I found @ Doughmesstic.
I don’t use mayo, but I always have a few jars of homemade yogurt.
Mixed with some garlic, Parmesan, and coated in Panko – this was going to be delicious.
BUT…Ian wanted to grill. BBQ breaded chicken didn’t sound like a great plan.
My chicken was already marinating in garlic-yogurt. This would be okay on the gill, but not what I was looking for taste wise.
To the fridge for inspiration - light-bulb
Bacon Wrapped – Chicken with Asparagus:
1 small jar (carton of plain yogurt)
4 cloves of garlic – minced finely
small sprinkle of Parmesan cheese
~I pulsed this together for a bit in the food processor
Season the chicken with salt and pepper
slather on the garlic yogurt
tops with 5/6 asparagus spears
wrap in bacon (2 slices for each breast – overlap)
Grill until the bacon and asparagus are crisp, and the chicken is no longer pink.
This was a huge hit even with the fussy one:)
