I know you’ve heard it all before, but let me be clear -
I DO NOT LIKE PACKING LUNCHES!
Sure, it would be SO easy to throw a sandwich, some chips, and packaged cookies into a bag and call it done.
I could, but I won’t. We simply do not eat that way.
As we come to the end of another school year (well almost), I am finding my lunch packing creativity is running on empty.
Leftovers are GREAT for the “picky eater”, but not always easily packaged up for school.
some things just are not good luke warm
Dessert is another issue – most of the kids bring a {treat}.
These fruit bars are healthy, but also worthy of the title {treat} – at least I think so:)
and they are perfect for lunch packing!
For the bars:
baking dish (I used an 8 inch square) sprayed with non-stick cooking spray (or buttered)
1 1/2 cups whole wheat flour
1 cup oats (not quick cooking)
1/2 cup sugar
1/4 cup almond meal
1 teas baking powder
1 teas corn starch
1/2 teas salt
1 cup coconut oil OR you could use 1 and 3/4 sticks butter (I used the coconut oil)
1 cup of raspberries
1 tbsp sugar
Do:
Combine the flour, oats, sugar, almond meal, baking powder, and salt
mix in the butter or oil (should be course crumbles)
press half to 3/4 of the mixture into the bottom of the baking dish
combine the berries with cornstarch and a bit of sugar (1 tbsp)
sprinkle the berries on top of the crust
top with the remaining “crumbles”
bake at 350 for 35 – 40 minutes
