ffwD ~ Cheese Souffle

I’m  not entirely sure why, but I love to make a souffle.  When I first began getting serious about my kitchen adventures, Julia’s Souffle Au Fromage was at the top of my list.

As it turns out, they aren’t nearly as finicky as one might think.

The only recipe I have ever used was hers, until now.

The Cheese Souffle recipe from Around My French Table (page 350) won me over.  This was my personal best souffle ever!
