You are probably wondering what pizza and popovers have in common. Nothing actually, but this is how the story goes.
My family has pizza night every Friday. We used to go out, but pizza has gotten expensive, and unless you live in NY or Chicago, it’s not that great!
For the last 5 or 6 years, I have made the pizza {2 to be exact}.
That’s more than 500 pizzas!
I’m getting bored.
This week I decided to get a bit more creative with our pizza night.
I have been hearing about pizza muffins and thought it was worth a look.

Turns out it is exactly that – muffin batter with pizza toppings mixed in.
Cute, but my kids are serious about their pizza, and I really didn’t think this would be a big hit.
Back to the blogs.
I saw a delicious recipe for cinnamon roll popovers {yum} at Doughmesstic.

I could roll the pizza and cut them like cinnamon rolls!
BIG winner.
For the pizza rolls:
1 recipe of pizza dough – recipe here (you can use store bought if short on time)
sauce (I use Trader Joe’s or Muir Glen organic)
shredded cheese
any additional toppings you like (my kids are purists and use only pepperoni)
make sure your cheese and toppings are in small bits (makes rolling much easier)
Do:
roll the dough into a rectangle about 1/4 inch thick
spread with sauce (making sure to leave a small border)
top with cheese and additional toppings
roll up (start from the long side of the rectangle)
cut in half, and then cut each half into 6 rolls
for smaller rolls you can use a standard muffin tin (I like larger rolls and use a 6 cup tin)
place each roll into a buttered (or sprayed with non-stick spray) muffin cup
Bake at 425 for 12 – 15 minutes

The popovers looked TOO good not to try, so we made those for breakfast
